From which, even if both sectors on a "single journey" are CX, the one that determines the baggage allowance for the whole trip is the Most Significant Carrier sector, and in your case that is HKG-SYD.
So on my reading of the rules you would only be allowed 30kg for the HKG-SYD sector.

It seems HGH, HKG, SYD are all in IATA tariff area 3, does it mean the following apply?
"If your flight crosses no IATA areas, but crosses an international border then the first carrier that crosses the international border is your most significant carrier"
Can I read this as HGH-HKG will be the most significant carrier as this would be the first carrier that crosses the border?
I actually need to check in around 65kg of luggage for this trip, so 50kg is not enough.
