Otherwise, do I have to exit security in Seattle, claim my bags, then re-check them and go through security again? I just realized this, so I'm considering changing my layover to something more than two hours in case of delays.
*if* you can't check through, an option might be to store your bags in SFO, and check them when you're back in SFO: There's a shop offering storage close to the United checkin in the Int'l terminal:

Typical rates are $30 - not great, but not that expensive either.
I'm guessing you found some better priced tickets from SEA

I wonder if there's any chance of just checking your bags for SFO-SYD (bypassing the SFO-SEA return), but IIRC there's a 4 hour checkin limit?
