Went with the tube, and everything worked out fine.
(Well, other than the wheel falling off my suitcase as I arrived at the hotel, but I can hardly blame the directions for that. Guess I'll be flying home with a new bag.)

You can get round this by ignoring the interchange signs, and taking the escalator towards the exit. When you reach the top, by the barriers, take the correct escalator back down again. No steps involved.
Thanks for this - I followed this tip, but I think they're reworking the paths to Jubilee as I still had to navigate some stairs. No biggie.
You don't need to buy an Oyster card if you are happy to pay directly with a contactless bank card, which you touch to the reader at the station gates at Heathrow, and a standalone reader at the final destination on the DLR. Canadian cards should work fine.
I need a receipt to keep the beancounters happy, so I went ahead and bought an Oyster card. I'll hang onto it for future trips.
