I am not 100pct the caterer matters as much as you think, I see this posted a lot across the internet. It's far more about $$$ and the airline itself!! CX catering caters SQ out of HK and it's lovely. Meanwhile, CX catering out of HKG serves....for years running now....the radioactive-colored dips and plastic wrap grissini on what seems like every single late night flight to Europe. Same caterer yet totally different result.
Maybe at a super high level the caterer will matter, but the airline is intimately involved in putting its menu together and working with the caterer to provide (within the determined budget) the menu. Budget and the airline's catering team are what matter most IME. Especially since CX isn't at an elevated level where perhaps the caterer does matter.
Do&Co have done a heck of of a job getting their name referenced constantly across the internet by bloggers, but I don't *fully* understand this phenomenon. I think they're just doing a really good job marketing. Because they're not the only (or even the main!) factor determining what you get served on the plane.
