I asked our corporate travel agent in China about baggage transfer in ICN and they replied that I would still have to pickup my bags in ICN, then check-in with Delta the next day. Since I'll be traveling with 3 - 4 heavy bags, it's no-go for me.

Bags can transfer at ICN. As long as it's tagged all the way won't need to pickup.
TA is probably confused by either 1)that bags at PVG can't transfer between MU/DL without picking up. (MU/MU connections will transfer just not MU/DL) or 2)that if checking in bags with DL (which you won't be since your 1st flight is MU) DL imposes a 12hrs limit between flights for transferring bags.
Thus if your connection option in PVG means flying MU for both flights you can skip having to pickup bags.
