I'm thinking of flying from DPS on GA and then flying to LAX on AA.
There are two considerations here. Firstly, even if the originating carrier won't through check bags via HKG, there is a reasonable change that the transfer desk will do it for you anyways. On arrival make your way to the appropriate transfer desk for the onward airline, show them your ticket, and they'll go find your bag, re-tag it and you won't need to bother collecting it.
However, if they won't do that, you need to allow the following time: up to 40 mins to disembark, clear immigration, wait for bag. 10 mins to head upstairs to the relevant check-in desk. Another 30 mins to clear security and departure immigration. You could get lucky and have no inbound queues for immigration, but you still have to wait for bags. (You'd need to meet any check-in deadlines for the onward airline in any event.)
