Not sure why you want to book in dollars. Most credit cards will simply convert foreign charges to dollars. Many cards have no foreign transaction fees and usually offer competitive rates.
Just to add to this, most credit cards that do charge foreign transaction fees switched some years back from foreign currency fees; the distinction is that the fee applies even if the transaction is in US dollars if the transaction is considered to have occurred outside the U.S.
