Unless Italy is vastly different to everyone else, you will only get hit with roaming charges if you have a running data connection, send SMS, or make/receive calls.
Incoming calls could be an issue that results in roaming charges. If the OP disables phone day and also finds a way to avoid the roaming-related charges for incoming calls, then it could work out well enough and cheaply enough.
