I would like to give an update after the return (and for the search engine in case someone likes another opinion).
We stayed at the Anantare Uluwatu Resort to relax and fight jetlag. Hotel is nice, not great. Restaurant for b'fast has a stunning view, garden and ocean front villas are recommended over rooms in the main building (but more expensive...).

In Ubud, we stayed at Warwick Ibah Villas. Stunning and good value for the money. (Ubud hotels at the time of booking were nearly fully booked it seemed.)

In addition, I can highly recommend the new DPS Airport Hotel Novotel that recently opened between Int'l and Domestic Terminal. As we had a long layover we booked a day room, relaxed and enjoyed the beautiful outdoor pool area (for an airport building). Restaurant needs serious improvement in food and service, though.
