Just got back from this trip. Rouge business class/Premium Economy turned out to be a great experience for me. The kosher meal was the typical Air Canada business class kosher meal -- on real china with real utensils. Interestingly enough, on the flight to PTY (a 9am flight) the hot portion of the meal was chicken and rice whereas the cold portion of that meal was fresh fruit, croissant and a muffin. Seems like the hot meal portion got added from a lunch/dinner menu. Worked out fine for me because I just ate the breakfast cold parts first and then waited a few hours before eating the chicken for lunch.

On the return flight, the kosher meal was clearly brought from Canada - this time the cold portion included chickpeas, cake, with the meat being chicken with potatoes.
