I think widebody jets are used quite a lot on short haul routes in Asia, I've had numerous 1-3 hour flights on widebodies with CX and SQ, as well as NH/JL. The first time I flew SIN-CGK with SQ, it took me by surprise to be on a 777 with F for the short hop...
It may be less common with 787s though, I don't know as my experience of it is on other aircraft.
