Alternatively just mattress run some cheap nearby property.

And to the OP, if you do join the dining program and have a dine in the next couple of days that will earn the necessary points for Spire, I would drop a nice email to the hotel. Mention that you are really looking forward to your 16-night (!) stay, as it will be the first opportunity to enjoy the benefits of your status as Spire, which you expect will become official about the time that you begin your long-awaited stay at their hotel. Hopefully they will take the hint and grant you some sort of room upgrade in line with your expected Spire status. Dining points usually post within a few days, so before the end of the stay you should have attained Spire status and earned the elite bonus points for your stay as well. Good luck!
Craigthemif is correct - Virgin miles to IHG post as qualifying.
Virgin is classed as a partner transaction not a points transfer.
Transfer also done within the last month and counted as qualifying.
