Here's some more answers:
1.) The chances of being upgraded depend of course upon, amongst other things, how many Golds are also trying to upgrade on your flight who may have purchased a higher fare than you. Who can honestly say? Your chances would seem to be better on a Saturday, or in the middle of the day.
2.) Since the flights to ANC average 3.2 hours, this really depends on how you feel about that amount of time. For what it's worth, the meal service is better than what you'll experience on the west coast services. (See below)
If you've got some trans-con travel coming up, I'd save your upgrades and take your chances on the ANC flights.
3.) I don't know if you read Trip Reports at all (I've heard that a surprising number of people just can't be bothered. Imagine that!) but I detail a recent AS First Class dinner flight on the ANC-SEA run. Basically, Carfield has answered this question as well as it can be answered.
