I'll throw in another vote for Spark'undefineds Steak House in NYC.

There's something about the way the great piece of beef is cooked perfectly on the inside (medium rare for me) yet seared to a thin crust ion the outside. It's a melts-in-your-mouth experience. The people watching is first rate too.
