I'm a big fan of the Fine Hotels and Resorts program, but the cost of entry is the $450/year Platinum card, whereas the other 2 methods can be used by anyone.

For Fairmont, Virtuoso has more complete coverage, but I really do like being able to do my own bookings online without needing to call a real person to get it done.
