These oddball re-route flights show up once in a blue moon and usually to accommodate a large group booking without designating a separate charter which would involve ferrying an empty aircraft in two separate directions. AC807 does indeed operate on November 18th and presumably will be the turnaround from the inbound 882 the day before. Guessing it's a political or trade delegation.
Similarly as published on airlineroute.net there's also a one-off CDG-YOW flight on April 17, 2017 - AC809 CDG0930 YOW1100 - 77W. Apparently YOW is hot!!
For the last several years there has been a one-off YUL-TLV (AC082) & TLV-YUL (AC083) flight tied into Israeli Independence Day (Yom Ha'atzmaut) & Holocaust Remembrance week in May.
