His new C at Los Cabo’s just-revamped One & Only Palmilla Resort, is one of spring’s most anticipated openings. In an Adam Tihany-designed space, Trotter will go “Mexiterranean” with riffs on such classics as seafood Vera Cruz & mole. Although the chef plans to spend a lot of time here, his second in command will oversee operations. “It’s a perfect fit,” Trotter says of native Mexican Guillermo Tellez’s helming of the kitchen. “It’s a coming home, of sorts”</font>
