If you like Hole in the Wall, try Peko's BBQ down across from the SODO/Starbuck's Center. Only open for lunch.

Good tip, though I would say they are two different beasts. Hole in the Wall does an excellent brisket, I think that is their strongest offering. Plus when they run out that's all there is so don't expect food at 2pm on Friday, go early.
Pecos is more of your classic wet sandwich. A different style than HitW. (It's also eating outside pretty much.) Some people will only like one taste or the other. I think both are great for the area.
I'll quickly offer up Matt's Chili Dogs as the best place to get a Chicago-style hot dog or beef sandwich. Within 8 minutes of downtown if you drive like me. Assuming you have access to a car, just take 4th ave past Costco a bit to the funky intersection around E. Marginal way. Also only 11-5pm joint, but they did add some Saturday hours.
I'm getting some more beta for you from my people that work (and lunch out).
