There is a very good backstory to the Ba-Le (Paris in Vietnamese) Restaurants in Hawai`i. Hope you don't mind me sharing it...

As Vietnam is a former French colony, the Vietnamese have a wonderful tradition of baking and making bread. The bread of Ba-La sandwiches are delightfully flaky and crunchy on the outside and moist inside. I love their sandwiches with julienned carrots radish and cucumber that is pickled in a sweet vinaigrette. Ba-Le makes wonderful (and cheap) meals.
