My question pre-supposes that the check bags would not need to be picked up at YYZ - as the second flight is considered to be a connecting flight?
Where are you flying to in the morning? You mention the international terminal, but do you mean the Terminal 1 International concourse or the Transborder (US) concourse? If you are travelling to the US I am pretty sure that the answer is no as US Customs won't be open after midnight to let you through. I don't know what the answer would be if you wanted to get into the international concourse at that late hour. If you can get in I would think it would be fine to sleep there.
As per hotels the ALT and Sheraton are the easiest as both are accessible via the train that runs between terminals (landside) and parking where the ALT hotel is. There are a ton of other hotels within a 5 minute ride by taxi or hotel shuttle.
