Right. November is flood time in Hoian. You should only visit some places in the North or the South. If travelling in the South, I suggest you go to Mui Ne (Phan Thiet), Da Lat or Nha Trang.
Mui Ne and Da Lat take awhile to get to since there is no airport.
Da Lat doesn't have boat trips.
Nha Trang has an airport that's not too far away and boat trips. But OP wants to avoid tourists and nightlife which is pretty much what Nha Trang is known for.
