I have booked one with the AA ATW desk - it does backtrack through Europe/Middle East, but it does not have any flights between those two zones, which is what causes AA to refuse to price it.

My other ex-MPM itinerary (I have bought two) does not backtrack at all, so there was no problem there

You can still "pop in any routing and dates then change afterwards." - but your initial itinerary must be valid (in the eyes of the airline issuing the ticket, that is).
Your proposed itinerary looks OK to me and AA should ticket it

Another way to ensure ticketing is to not have the backtrack to Europe in the itinerary. If your itinerary goes West around the world then you can return to Africa at the end with either HKG-JNB or SYD-JNB. Alternatively if your itinerary heads East then you can return to Africa at the end with GRU-JNB
