You can still get a room there for under USD 200 if you book in advance. There are harbor view rooms which can be booked and you can always go to the bar on the top floor for its amazing view. First stop on the free Airport Express Shuttle bus from Kowloon Station and easy access to MTR and KCR.

I just had a look at hotelscombined.com.au and saw a hotel that looked ok in TST for a very reasonable price of well under AUD$200 for a queen room. THe Kowloon Hotel on Nathan Road. I think I saw that in my travel.
The harbour view was worth every cent we paid for it. Husband pulled up the sofa near the huge window and would love watching the boats come and go as well as the workmen fixing the Avenue of the Stars. I guess you do pay what you get and if there is a $100 room with a harbour room there has to be a catch.
Enjoy HK.
Kowloon Hotel will give you a very good location and run less than the Sheraton but the best view is the backside of the Peninsula. Rooms on the small side, cannot be considered 5 star but certainly acceptable.

Location is close the MTR .....
however, it is a little far from most places you want to visit. I always stay there when I need to go to Shenzhen and come back.
There is also another hotel with good value near Central, right above LKF, problem is music from pubs will not stop before 3 or 4 in the morning and it's really loud.
Sha Tin is not where a first-time visitor should stay. I actually lived out there for a bit in my teenage years and even for me holds little attraction today.

A common compromise on value/location, albeit with small rooms is the
Bishop Lei on Robinson Road. Bus stop right outside for Admiralty & Central MTRs (plus its own shuttle bus); you rarely have to wait more than 5 minutes for a bus to Admiralty (get your Octopus card on the way in to HK of course), which then takes about 5 minutes to reach. Outside the height of summer it's very walkable from Central (using the mid-levels escalator to come up).
As an example, for next week, their biggest rooms (Grand Harbour View Suite, which is 280sq.ft, so not that grand) are HK$1043 per night (US$135 or so). Note though that they only have showers, not bath tubs.
It has an outdoor pool, open mid-March through November
Bishop Lei House is kind of a secret place to stay, but man the hills nearby if you do any walking are brutal. I am not sure I would recommend this to a first-time visitor but I imagine a few of the rooms must have interesting views. I know a lot of people who stay there but they are people who know HK well. You need to take the bus or taxi to get there.
