Officially it is 2 hours with FR but at EDI a couple of weeks ago we checked our bags in more than 2.5 hours before our flight. The process was entirely self-service so not sure if this helps.
FR check in start time at STN is clearly 2 hours before ETD.
You can see the display at the departure hall which flight you can check in.
Depends on the flight, check in counters are fixed.
Without check in counter number, you don't know where you should check in.
Businss plus check in counter is one area. It might be easier to guess.
Middle size airport like Frankfurt-Hahn is more flex.
at HHN, just go to check in desk anytime, they take your luggage.
