I've (potentially rashly given the heat) booked a week in August in the UAE with wife and 2 year old. Flying in and out of of AUH but Dubai looks to have a better selection of hotels.

Am currently torn between the FS and the O&O royal mirage, any views on which would be better? Facilities and service seem to get better reviews at the FS but theres only two restaurants which worries me a little. Or should I be looking elsewhere...?
It doesn't get any better in terms of F&B than FS -- I was impressed by both quality and choice! Don't forget that aside from 2 restaurants and 4 lounges you have the restaurant village right in front of your hotel! While I wish one would get signing privileges there (are you listening, FS Dubai?), you have several world class restaurants within walking distance. Coya, Jean-Georges, Nusret... all there!
