Baggage claim is after the immigration. Once you pass the immigration, you will have to exit all the way.
If the baggage can't be interlined, then you have to go through the whole deal.

I did this before several years ago. I had a tight connection and guest services agent was waiting for me when I exited the plane and escorted me E1. The agent for my connecting airline requested my bagged tags and had someone go collect my bags and ensured my bags made my connecting flight. I never went through customs or even saw/touched my bags.
I see no reason to clear customs if you are just connecting to another international flight.
Need some experienced HKG travels advice.
