Sendai itself is worth a visit if you have interest in traditional handcrafts.
Yamadera and Matsushima are nice and nearby.
I'm not sure this really fits your criteria of a stopover, but it might. I spent a day in Sendai on my last trip as a stopover between Aomori and Tokyo and had a nice time.
