And with reason, with hair-raising critical violations like this one at Matsutake Sushi:

Critical The food establishment serves food that is raw, undercooked, or not otherwise processed to eliminate pathogens and failed to inform consumers of the significantly increased risk associated with certain especially vulnerable consumers eating such foods in raw or undercooked form. (sushi)

They'd better have signs informing customers that "WARNING: The sushi you are about to eat is raw" next time, or I'll have to sue!

(On the other hand, the same inspection spotted a live roach, but this only qualifies as a minor remark...)
