FWIW I've never had a CBP officer look through my passport, except when trying to find the Visa page (which is only on recent entries, previously I had an ESTA) - they don't seem too interested in that part. I can't say much about the Visa application side of things, they keep your passport while printing the Visa, so they've got infinite amounts of time to check stamps then.
That said, Europeans who've travelled to countries like Iraq/Iran/Afghanistan haven't had any issues with Visa applications (you lose the ESTA if you visit one of those countries), so it seems like Turkey shouldn't be too much of an issue either as long as your visits don't seem too suspicious (it seems like you weren't in "Turkey" for months at a time, which is probably where they get suspicious).
However, while getting my Visa interview (US embassy in a central/western european country), I did notice that anyone who sounded vaguely eastern european was not getting their Visas approved on the spot: they were all told that they would need to submit more data, e.g. their job contracts. (The people I overheard all seemed to be of either polish or russian citizenship, based on accents and names.) It may or may not be worth preparing this additional documentation and bringing it to the interview.
