Let's lay aside the Stay Your Age booking discounts for a moment and focus on what is necessary for you to get credit:
(1) You must be the guest of record on both rooms. Your mom or dad can be added as a guest for the room they will be occupying, but you must be the guest of record. You must also occupy at least one of the rooms yourself.
(2) You must pay for both rooms' charges at check-out. Your mom or dad cannot pay for their room and you get credit.
How the hotel is going treat the Stay Your Age booking discounts is going to be the real wildcard here since you will be occupying a room that they qualify for, but you don't. Best of luck with that.

So if I want to guarantee that I will get credit for both rooms at a non-optimized discount (assuming both my father and I are occupying the rooms),
1) I should book both rooms in my name under the PAYAGE discount,
2) Put my father's name as a guest on one of the rooms,
3) When I check in or check out (not sure which), I ask to receive the PAYAGE discount on one room based on my father's birth year and ask to receive the PAYAGE discount on the second room based on my birth year.
Is that an acceptable approach from Starwood's perspective? Thanks in advance for your assistance.
