Usually 2 lanes are open. In T3 there are certain gates where a few gates share security (i.e. A1 to 8, B1 to 8, A20 to 21) where sometimes more than 2 lanes might be opened.
Skyteam airlines (certainly KLM) tend to run two queues to gate security. One for premium and elites, and the other for economy.
