Also, this is Hong Kong, not the US. Even when DCC is present in the US - I've only seen two examples in the wild when my sister-in-law used her card - the cashiers didn't even have any input on the terminal.
I would guess the prospect of a chargeback is far more likely to come back to the end employee in a shop in Hong Kong than it would be at a big box retailer in the US.
