This is just a suggestion but there's a Juan Valdez pre security in T8. Unless you're arriving in T4 you'll need to take the air train anyway. Since the air train basically runs in a big circle you can get off at T8, walk to Juan (it's past American's check in, before security) grab some really good coffee and pastries. No seating, however. But even for coffee and a snack to go, then back on the train to your terminal. It will help to pass the time.
