3.2.1 ...... a Ticket is valid for:
3.2.1.1(a) one year from the date of issue; or
3.2.1.1(b) subject to the first travel occurring within one year from the date of issue,
one year from the date of first travel under the Ticket.

Whilst the word "date of issue" is not defined in the CoC, logically one cannot delayed his itinerary forever by changing the departure date every 364 days.
