No problem, your luggage will be transferred onto the Bali flight. No need to collect or go through customs.

Not sure about that. However, 8:30pm is very quiet at DXB. So, you should be through immigration by 9pm. Just ask the taxi driver to stop off at your hotel for 5 minutes while you dump your bags. You can then check in when you get back later.
