The Scotsman is very good.

The traditional luxury Hotels in Edinburgh are both on Princes Street.

The Balmoral is a bit Ritz Carltony - great restaurants and great spa.

The Hilton Caledonian (affectionately known as "The Cally" by locals) is also worth a look.
