I agree with B Watson that the logic is suspect; however, perhaps we are just misinterpreting the servers' statements. It certainly is possible that FS has hired an outside wine consultant (not a distributor) to help them develop their wine list (and, although it would surprise me, perhaps they are using this consultant to develop a system-wide wine list). And, of course, any time a wine list changes, someone's favorite wine is bound to be cut. But there is no question that the wine list is intended to appeal to a broad audience and to be a profit center, so wherever they are going with their wine list, the intent has to be appeal and profit, not cost savings.
