I suspect the timing of the flight and the timezones the passengers are in can make a difference with the choice of breakfast/dinner. From the middle east, IFAIK the night flights are very late indeed - midnight or so and the departure airports are close to the timezone of the UK. So for passengers it feels "late night" at departure and they aren't hungry, but might be more peckish towards landing around 6 or 7 am in the morning according to their body clocks. From the east coast USA its harder - flights leave 7 to 10 pm and with a 3 hour check-in - so passengers may well be hungry at boarding time. The 5/6 hour time difference means that towards the end of the flight, it is still night time for their body clock (on USA time) and eating then probably isn't what they want to do - a few more ZZzzzs might be more welcome.
Exactly; would be great to offer no breakfast at all and wake people up 30 mins before landing for tea/coffee service with a breakfast box handed out on disembarkation. The supper service could be a combined drinks and food tray completed within 1 hour after departure.
Or more radical it could be advertised as an econmy sleeper service warning the customer that no catering apart from drinks is offered on the flight. A voucher could be given for pre dinng from a food outlet in the terminal
