As I mentioned before, I have not been to Haneda since 1978, but Edo Market, which others have said is airside, has Japanese-style restaurants that stay open till 11PM or midnight.

OP has indicated on another post that arriving on domestic flight from Sapporo. Getting to international terminal may not be that practical.
However, what I gathered from other posts by OP, OP’s initial plan was to ski at Niseko in the morning, head to Sapporo for snow festival in afternoon, then head to Chitose Airport for flight to Hanede in the evening, check-in at Conrad Tokyo, and finally head out to Shinbashi area for very late meal.
I really wonder if OP will be up for very late meal at Shinbashi after that long day. OP can experience winter snow delay. If I were OP then most likely I will simply crash on a bed after check-in at Conrad Tokyo…
