I'm not too familiar with the breaks in guata, but if you're open to nicaragua i can put you in touch with some friends there. dec/jan is busy season but nothing like west coast of U.S.
Easy to drive there with rental truck, waze works there, beach towns are safe and much cheaper than costa rica.
