My apologies, I misunderstood your post. Your point on the one-way is, of course, well taken...I was thinking train, but that may not be best either. I do hope the explanation was helpful for the OP, I know a lot of my friends and family members don't understand the open-jaw concept.

I would suggest starting with Google Flights. It's very helpful in allowing you to change different variables on the fly and see schedules and prices across airlines.
Figure out your beginning and end flights first. That's your biggest expense and hardest to nail down. Then figure out all your destinations. Book a hotel in each one...use Expedia, a hotel website, or whatever you like. Finally, get trains, car rentals or intra-EU flights. At least this is the order in which I typically book my trips.
When you think about it, you really have 3 steps...flight, hotels, transport...easy

. Not really worth using a travel agent. You will probably find some more interesting things as you research on your own.
