I've flown on those. KLM used to use them SFO-AMS and it was the most miserable long haul I've ever been on.

A Combi is not "technically" a cargo plane. It is most certainly classified as a PASSENGER aircraft and has to be operated to those standards.

Another question for the experts here: anybody know how many crew would be on a 757-SF for a flight BWI-Paris? And what airport freighters would land at in Paris?
