I'm not disagreeing with your experience, but multiple airlines have been shown to do precisely this at times. Frankly, I'm surprised it's taken hotels this long to get around to it.

And from an "IT perspective" it's not really all that hard. With every request (every time you click a link), your browser identifies itself (browser name, version, etc) to the server.
