Agree with the above comments. Your day 3 and day 7 are way over booked. You have a couple of days to play with. I'd suggest splitting the trip from Monterey to SoCal with a night somewhere on the coast - Cambria, Cayucos, Morro Bay, even San Simeon - so you can enjoy the central coast.
