I'm not arguing that there was never a time the "on-the-side" cottage cheese was removed during a specific time frame. I'm not disputing anything transborder from an omelette perspective either, simply because I don't do such routes in the same crazy volume I do domestic or international routes. What I'm telling you are two things:
1. Domestically, In the last decade, if there was ever the cottage cheese, such cheese never placed on top of, or embedded within the omelette.
2. For the last while, there definitely has been the cottage cheese as part of the domestic omelette dish. There was a short period where the red pepper relish was removed from the omelette dishes but they soon made there way back as well.
The only time I have ever experienced a true cheese omelette anywhere in the system is specifically AC869 LHR YYZ on a consistent basis.
The cheese has been on the side (boursin type - I don't find it to taste like cottage cheese) for a while now from most North American stations. Breakfast flights ex MEX/HAV may be the exceptions. Bear in mind that catering considers mainstream tastes. Over the years omelettes have contained, mushrooms and/or swiss-cheddar cheese and/or red-green peppers to which many have had sensitivities or dislikes. Provisioning an herb omelette with optional cheese accompaniment on the side seems to be the "safe" and preferred choice.
Also bear in mind that quiche/frittatas/bread pudding have all been tried and feedback has indicated that at the end of the day, you guys want your omelettes.
