The Frommer's guide book to HKG has an excellent section entitled "what to do if you only have 1 day in Hong Kong" and covers multiple days (up to a week, I think). Great book (I actually bought one since it was so useful) and captures all the aspects of the city without a lot of fluff. You can pick any page at random in the book and it will be useful (few guide books are like that).
