In general, I find Hyatt House to be a better stay than Hyatt Place - everything about HH is nicer, rooms, lobby - breakfast especially. But, I haven't stayed at a newer Hyatt Place recently.
GH and Regency are usually on a completely different level (above). So, not sure which Regency you're considering, but some in Denver appear to be cheaper than the HH/HP (at least on weekends). You may want to consider booking a club level room which would include breakfast etc if they have a club.
