Another choice that I mentioned in one or two of the other Burgundy threads here, but is not Relais & Chateaux is the Chateau de Gilly near Vougeot.

Were you at Loiseau pre or post suicide? I'm curious if it's still as well regarded.
I can strongly endorse Cote St. Jacques in Joigny, as well as Lameloise. I was less impressed with Georges Blanc. Unfortunately, my favorite restaurant of all time in Burgundy is no longer there: Jean Paul Thibert's former place in Dijon.
