FYI, I'm not actually looking at AC flights - I'm looking at TK - they have the cheapest J fares for my itinerary and I've read some pretty good things about their J class. The one concern is that my itinerary includes transiting through IST on the way to and from ATH and given the current situation in Turkey and the recent terrorist attacks in IST it does give one pause for thought.
Ah well I dunno about TK but on AC you can cancel for free within 24h. I imagine most airlines are the same, in which case you'd be able to cancel ticket 1 if ticket 2 went up by more than the difference.

I would personally avoid RyanAir. Especially if you like flying J.

That said most European J products (including BA/LH) are just middle seat blocked 30" pitch options so there aren't that many decent 'in flight' options.
