French name with accent, dash and other characters

Hi,
I have to book ticket for people with French name that include "non standard" characters (e.g. accent, dash, etc.) Should I use
- Andrée or Andree
- Édith or Edith
- Jean-Philippe or Jean Philippe or JeanPhilippe (note that this is a first name, no middle name or last name involved here, last name is simple).

They say it must be like in the passport (left in the example), but sometime the printed version of those name in online forms do not look like this, the accent is replace by weird character or omitted. I am worry it may be the same problem with boarding pass.

I don't want to have problem with a mismatch name. How should I write them? Travel involves Canada, USA and Western Europe.
